Cashew Parmesan-Style Cheese

Cashews:
Nutritional yeast:

2 cups
3 tablespoons

Instructions

1. In a pan over medium heat, toast the cashews until they turn golden.
2. Let them cool at room temperature.
3. Transfer the cashews to the blender.
4. Add the nutritional yeast and ½ teaspoon of salt.
5. Process in 10-second intervals until you get a homogeneous consistency, similar to grated Parmesan cheese.
